Roasted Asparagus and Carrots

- 1 pound fresh asparagus shopping list
- 1 pound carrots shopping list
- 6 tablespoons olive oil, divided shopping list
- salt and pepper to taste shopping list
How to make it
- Line two baking trays with foil. Preheat oven to 350F.
- Wash and trim bottom ends of asparagus.
- Peel and wash carrots. Cut into 4 - 6 inch lengths and then slice in half lengthwise.
- Drizzle oil over the vegetables and sprinkle liberally with salt and pepper. Toss by hand to make certain oil and spices cover vegetables. Place asparagus and carrots on separate baking trays (one may cook faster than the other, depending on size).
- Roast for about 30 minutes, or until the vegetables are done to your likening. About half way through, turn the vegetables with a spatula.
- Serve immediately.

It doesn't get any better than simple roasted vegetables. I started the carrots and then about 15 minutes later added the asparagus. Perfect!
