How to make it

  • I n a small bowl, beat cream cheese and sour cream until smooth.
  • Stir in pastrami and green pepper.
  • Transfer to a greased 1-qt. baking dish.
  • Sprinkle with pecans if desired. Bake, uncovered, at 350° for 25-30 minutes or until heated though and edges are bubbly.
  • Cut out bread with a shamrock-shaped cookie cutter if desired. Serve with spread.
  • Yield: About 3-1/2 cups.

    Like to try it. The packaged beef you describe is actually DRIED sliced beef, and sold as various types (beef, corned beef, pastrami). This is the same type of dried beef you would make creamed chip beef from. Also, it would be interesting to experiment with replacing ONE-HALF of the green peppers with one 4 ounce can of diced mild green chilies (well drained), as these should be about 1/4 cup per can (to give a tiny bit of spice, but not too much).
