How to make it

  • Wash sorrel, remove tough stems
  • Shredd leaves
  • Melt butter in pan and cook sorrel till wilted and dry
  • Pour hot stock over sorrel
  • Mix egg yolks with cream
  • Pour in slowly and stir and cook slow heat untiol soup starts to thicken
  • Do not let boil
  • Pour into bowls
