Sausage and Pepper Sandwiches

- 3 1/2 pounds sausages, * shopping list
- 3 bottles beer, 12-ounces each shopping list

- 3 tablespoons olive oil shopping list
- 2 red bell pepper, seeded and sliced shopping list
- 3 medium sweet onions, sliced into wedges shopping list
- 6 garlic cloves, smashed and chopped shopping list
- ... shopping list
- 1 small can tomato paste, 6 ounces shopping list
- 1 bottle beer, 12-ounces shopping list
- 1 cup barbecue sauce, your choice shopping list
- ... shopping list
- 8 - 10 fresh hoagie rolls shopping list
How to make it
- * I used a mix of Johnsonville Sausages, Hot Italian and Chorizo; 3 packages weighing 19+ ounces each.
- Add the sausages and beer to a large sauce pan over high heat and cook until the beer comes to a gentle boil. Reduce the heat and simmer the sausages until done through, about 15 minutes. Add water if necessary to cover the sausages. Remove sausages from pan, slice on the diagonal, and cover with foil. Empty the pan.
- Return the pan to the stove, heat on medium, and add olive oil. When nearly smoking, add onions and peppers to the skillet and saute until tender and golden brown, about 6 minutes. Add the garlic and saute until fragrant. Stir in the tomato paste, beer, and barbecue sauce. Cook for a few minutes, then add the sausages (and any collected juices) back to the pan. Reduce the heat and simmer until the sauce is nice and thick, about 10 minutes.
- Serve with fresh hoagie rolls.
- Optional:
- Preheat the oven to 350 degrees F.
- Slice the rolls open, put on sheet tray, and toast in the oven while the sausage is simmering. Remove rolls from the oven and fill with the sausages and peppers.
- Transfer to serving dishes.
