Mixed Berry Spoon Cake

Celebrate spring with this luscious dessert of warm berries topped by a thin layer of cake.
Ingredients
- Fruit: shopping list
- 1 (16 oz) container fresh strawberries,quartered shopping list
- 1 (10 oz.)pkg. frozen mixed berries shopping list
- 1/3 c honey shopping list
- 1 Tbs cornstarch shopping list
- 1/4 tsp cinnamon shopping list
- Cake: shopping list
- 3/4 c flour shopping list
- 1/2 c sugar shopping list
- 1 tsp grated lemon zest shopping list
- 3/4 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1 egg shopping list
- 1/4 c milk shopping list
- 1/2 tsp vanilla shopping list
- 6 Tbs butter,melted shopping list
How to make it
- Preheat oven to 375 degrees.
- Fruit:
- Place fruit into bottom of 9" square cake pan. Whisk together honey,cornstarch and cinnamon. Pour over fruit mixture and toss. Set aside
- Cake:
- In large bowl,whisk together flour,sugar,lemon zest,baking powder and salt. In small bowl,whisk together egg,milk and vanilla. Add to the dry ingredients and mix until just combined. Pour in melted butter and stir till mixture is smooth. Spoon batter on top of fruit.
- Bake about 45 mins or till topping is golden and fruit bubbling.
