Eds Cranberry Waffles With Orange Sauce - Diabetic Friendly

- Pre coat the waffle iron shopping list
- Ingredients: shopping list
- 1 ½ cups nonfat yogurt shopping list
- 1 ½ cups Fat Free cottage cheese, or 1 ½ cups soft tofu shopping list
- 1 ½ cups low-fat buttermilk shopping list
- 1 Tbs. vanilla extract shopping list
- 2 cups all-purpose flour shopping list
- 1 Tbs. baking powder shopping list
- 3 egg whites shopping list
- ½ cup sugar or equivalent ½ cups sugar substitute shopping list
- 1 cup fresh or frozen cranberries, finely chopped shopping list
- 2/3 cup slivered almond nuts chopped ( optional ) shopping list
- Non stick cooking spray shopping list
- Optional: Top with lite Cool Whip shopping list
- orange Sauce: shopping list
- 3 Tbs. margarine shopping list
- 1cup honey, or 1 cup light corn syrup shopping list
- 3 Tbs. Freshly squeezed orange juice shopping list
- 2 Tbs. Finely grated orange zest shopping list
- Optional: whipped cream or Lite Cool Whip shopping list
How to make it
- Prepare Waffle iron with non stick cooking spray.
- If using chopped nuts, lightly roast in a dry skillet and set aside.
- Mix chopped cranberries and sugar or sugar substitute. Place the nonfat yogurt and Cottage Cheese or Tofu in a blender and puree. Place in a large mixing bowl and stir in the buttermilk and vanilla extract.
- Mix the flour and baking powder together. Whip the flour mixture into the buttermilk mixture. Stir in the cranberry mixture.
- Beat egg whites to soft peaks and fold into the batter gently.
- Baking: Pre heat the Waffle iron to the manufacture's directions.
- For each of the waffles:
- Pour ½ cup of the batter onto the center of the waffle iron and cook until golden brown, repeat with the remaining batter. Store finish waffles in a warm oven till ready to serve.
- Serving Size 1 waffle.
- For the Orange Sauce:
- In a medium skillet cook the margarine, Honey or corn syrup, and fresh orange juice over medium-high heat for 15 minutes. DO NOT BOIL. Stir in the fresh orange zest.
- Optional top with Cream or Cool Whip
- Nutritional Values: Calories per serving: 264, Fat: 6g, Cholesterol: 16mg, Sodium: 223mg, Carbohydrates: 38g, Fiber: 1g, Protein: 9g.
