How to make it

  • Prepare Waffle iron with non stick cooking spray.
  • If using chopped nuts, lightly roast in a dry skillet and set aside.
  • Mix chopped cranberries and sugar or sugar substitute. Place the nonfat yogurt and Cottage Cheese or Tofu in a blender and puree. Place in a large mixing bowl and stir in the buttermilk and vanilla extract.
  • Mix the flour and baking powder together. Whip the flour mixture into the buttermilk mixture. Stir in the cranberry mixture.
  • Beat egg whites to soft peaks and fold into the batter gently.
  • Baking: Pre heat the Waffle iron to the manufacture's directions.
  • For each of the waffles:
  • Pour ½ cup of the batter onto the center of the waffle iron and cook until golden brown, repeat with the remaining batter. Store finish waffles in a warm oven till ready to serve.
  • Serving Size 1 waffle.
  • For the Orange Sauce:
  • In a medium skillet cook the margarine, Honey or corn syrup, and fresh orange juice over medium-high heat for 15 minutes. DO NOT BOIL. Stir in the fresh orange zest.
  • Optional top with Cream or Cool Whip
  • Nutritional Values: Calories per serving: 264, Fat: 6g, Cholesterol: 16mg, Sodium: 223mg, Carbohydrates: 38g, Fiber: 1g, Protein: 9g.
