Goucho Pie

I saw a recipe for Shepherd's Pie and it looked yummy, then I realized it had a LOT of veggies in it, and "Mr. Thinks Corn Chip are Vegtables" would not like it. So I came up with this one. Beef, Beens, Rice tomatoes with chili seasoning topped with Cornbread
Ingredients
- 1 lb ground beef (plus a half pound if you like) shopping list
- 1 can black beans - rinsed shopping list
- 1 can white bean - rinsed ( I had great northern beans) shopping list
- 1 can diced tomatoes shopping list
- 1 pkg chili mix shopping list
- 1 1/2 cups cooked rice shopping list
- 1/2 cup frozen corn shopping list
- ~@~ shopping list
- enough cornbread to cover a 9x13 pan I used 2 boxes of Jiffy Corn Bread mix plus two tbs sugar per box shopping list
- 1cup frozen corn shopping list
How to make it
- Set oven to 400 degrees
- Spray 9x13 pan with cooking spray.
- Combine first 7 ingredients well and pour into prepard pan
- Mix cornbread according to directions on the box and add 2 tbs sugar per box and frozen corn, mix well
- Spread cornbread mix over top of meat mixture and bake for 20 minutes until cornbread is done.
