  • HEAT THE OIL AND BUTTER IN A LARGE FRYPAN. DREDGE THE CHICKEN BREASTS IN THE FLOUR AND SAUTE FOR 3 MINUTES ON EACH SIDE. ADD THE ONION & GARLIC. SPRINKLE THE TARRAGON AND PARSLEY ON TOP OF THE BREASTS AND COOK FOR 5 MINUTES MORE. SEASON WITH SALT AND PEPPER.REMOVE THE CHICKEN FROM THE PAN. ADD THE SWEET SAKE FIRST. SIMMER UNTIL REDUCED BY ABOUT HALF. ADD THE CREAM AND RETURN THE CHICKEN TO THE PAN. SIMMER 5 MINUTES MORE. SERVE OVER RICE OR PASTA.
