  • 1 package whole wheat penne pasta
  • 5 tomatoes grated
  • 2 tablespoons tomato paste
  • 1 small white onion chopped
  • 2 cloves garlic sliced
  • 2 red bell peppers chopped
  • 1/2 cup black olives
  • 1 teaspoon oregano leaves
  • 1 teaspoon crushed pepper
  • 1/2 teaspoon mint flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 bunch parsley chopped
  • 1/4 cup olive oil
  • 2 cups grated cheese
  • 1 cup mushrooms
  • 1 teaspoon fresh basil
  • 1 cup fresh corn kernels

Directions
  1. Boil penne.
  2. In a deep skillet heat olive oil and stir in onions and garlic.
  3. Cook until onions are soft.
  4. Add peppers and olives then stir for 3 minutes then add the paste.
  5. Add mushrooms and stir for 3 minutes then add paste and stir 2 minutes longer.
  6. Stir in tomatoes, pepper, oregano, mint, cumin, salt, basil and corn.
  7. Simmer on low until tomatoes are cooked.
  8. After turning it off add parsley.
  9. In an oven dish put the penne, tomato sauce and 1/2 cup water.
  10. Mix well then cover with foil and bake in a preheated 375 oven for 25 minutes.
  11. After 25 minutes put the grated cheese on top and continue baking.
