Fillet Steak With Oysters And Stout Sauce

- 200g/7oz fillet steak shopping list
- 225ml/8floz stout (Or other dark ale.) shopping list
- 225ml/8floz veal stock shopping list
- 3 shallots, peeled and topped shopping list
- 1 tsp worcestershire sauce shopping list
- 1 inch cinnamon stick shopping list
- 0.5 tsp coriander seeds shopping list
- 1 bouquet garni shopping list
- 3 oysters, shucked shopping list
- 1 tsp butter, chilled shopping list
- salt and finely ground black pepper shopping list
How to make it
- Bring the stout and stock to a simmer in a saucepan add the Worcestershire sauce, cinnamon, coriander and bouquet garni. Poach the steak for 10 minutes to get it to a rare stage, add up to 4 minutes for medium to medium rare. After 5 more minutes, add the shallots. Remove the beef, keep warm and leave to rest. Add the sugar to the sauce pan, strain and discard all but the shallots and reduce to thicken. Add the oysters to the sauce to poach, keep the pan warm. To serve, Finish the sauce with the butter, season and keep warm. Slice the beef into 3 angled pieces and sit overlapped in the middle of a warmed serving plate, surrounded with alternating oysters and shallots. Circle the plate with the sauce and garnish with fresh herbs.
