My Soup

- Picture sometime tomorrow. shopping list
- roman beans (red and white) soaked and made the day before shopping list
- 3-4 bunches fresh rapini pulled from stems -stems may be peeled and added shopping list
- 2 packages of turkey necks shopping list
- 4 packages chicken necks shopping list
- 1 tbsp1 package (box) pastina or orzo or acini di pepe cooked shopping list
- kosher salt shopping list
- sprigs of fresh: shopping list
- parsley shopping list
- lemon balm shopping list
- rosemary shopping list
- dill shopping list
- white pepper to taste shopping list
How to make it
- Heat pressure cooker to med to high
- add oil
- add washed and dried chicken necks
- stir as you brown
- add turkey necks
- stir as you brown
- sprinkle your salt and pepper on
- add your home-made stock
- stir to make sure there is nothing sticking to the bottom
- add your fresh herbs if you make a bouquet garni they will be easier to remove
- put lid on and as soon as steam starts to escape lower to medium
- cook for an hour
- place under cold water and allow steam to escape
- place colander over a very large bowl and strain soup
- taste and adjust
- put cooker back on stove
- bring to a near-boil and add your cleaned rapini
- While that is cooking:
- take meat from all neck bones and shred slightly
- rapini should be tender and not mushy
- add meat
- add beans
- add pastina
- simmer for about 10 minutes
- Serve with sweet creamery butter and your best loaf of fresh-baked Italian bread

I like making soups and using "odd" poultry parts is a great way to make use of them. That must smell great when it is cooking!
