I am not sure if there's any other Sweet Chili Dijonaise Chicken Sandwich recipe out there but I was experimenting in the kitchen and came out with this recipe myself.

Ingredients
  • 2 tbsp of Chicken Salt
  • 400g Chicken Breast
  • 2-3 tbsp of Dijonnaise
  • a dash of lemon juice
  • 1-2 tbsp of Sweet Chili Sauce
  • 1 tbsp of butter
  • two dashes of white pepper
  • a dash of black pepper
  • a dash of mint
  • Some bread
  • Some tomato or cucumbers

Directions
  1. Marinate the chicken breast with chicken salt for at least an hour. (this step is optional, you can skip this if you want to save time.)
  2. Bring the chicken breast to boil for at least 15 minutes or until cooked.
  3. Drain the chicken and keep some chicken broth.
  4. In a bowl, mix dijonnaise, lemon juice, sweet chili sauce, butter and mint well.
  5. Shred the chicken breast and mix well with the above step.
  6. Sprinkle both the pepper and mix.
  7. Refrigerate to chill.
  8. Tip: You can adjust the ingredients according to your taste. Add boiled egg and mash it together if you like.

I liked how this one turned out too. Very refreshing and not as strong as the mayonnaise chicken sandwich we always get. ;)
