Salsa Chicken Fiesta

- 1-1/3 c Original Bisquick mix shopping list
- 1/4 c water shopping list
- 2 eggs shopping list
- 2-1/2 c shredded cheddar cheese (10oz) shopping list
- 6 large boneless,skinless chicken breasts,cut into 1/2" pieces shopping list
- 1 jar (16 oz) chunky salsa shopping list
- sour cream(if desired) shopping list
- ground red pepper(cayenne),if desired shopping list
How to make it
- Heat oven to 400 degrees. Spray 9x13" baking dish with cooking spray. In med. bowl,stir Bisquick mix,water and eggs;spread in pan. Sprinkle with 2 c cheese.
- In 12" skillet,cook chicken over med -high heat till no longer pink;drain. Stir in salsa;heat until hot. Spoon over batter in pan to within 1/2" of edges.
- Bake 25-30 mins or till edges are dark golden brown. Sprinkle with remaining 1/2 c cheese. Bake 2 mins. longer or till cheese is melted;loosen from sides of pan. Top each serving with a dollop of sour cream;sprinkle with ground red pepper.
