How to make it

  • Preheat oven to 400 degrees.
  • Line cookie sheet with parchment paper.
  • Lightly flour a large smooth surface for kneading.
  • Whisk together dry ingredients in large bowl.
  • Combine in butter until mixture looks crumbly.
  • Make a well in the dry ingredients. Pour in butter milk and mix just until ingredients clump together.
  • Place dough onto prepared surface and lightly knead until dough is cohesive and clumpy. (DO NOT knead until smooth. Bread will be tough.)
  • (Optional) Press dough into flat circle and sprinkle raisins on top. Press into dough. Fold dough into thirds and press flat. Fold into thirds the other way.
  • Form into ball and place on prepared cookie sheet.
  • Flatten dough ball into a disc 6in round and 2in tall.
  • Bake in oven for 40 minutes, rotating halfway through.
  • Let bread cool on wire rack.
  • Serve brushed with melted butter.
