How to make it

  • Fry the bacon until crisp, drain the fat
  • Rinse the black and red beans in a colander under cold water
  • place ALL beans in a really large glass bowl, add onion, peppers, garlic and mix well
  • Add the bbq sauce, brown sugar, mustard, and bacon, mix well.
  • Taste, add more mustard or brown sugar if desired, then the salt and pepper.
  • Transfer the bean mixture to the aluminum pan(s).
  • Set up your grill for indirect grilling, preheat to about 175
  • Toss all the woodchips onto the coals
  • Place the beans on the center grate, away from the heat, cover the grill
  • Cook until the beans are thick, and rich, stir and check temp. every 15 minutes
  • If they start to dry out before they're done, cover with foil.
  • When done remove and let rest about 15 minutes.
