How to make it

  • Soak the lentils in a bowl of hot water for half an hour
  • Drain and put in a blender with coriander seeds and pepper corns and blend until a thick paste is made.
  • Add remaining ingredients and let stand for half an hour.
  • Heat half an inch of oil in a deep frypan or wok until smoking. Form patties, 10cm across, with moist hands and fry for a couple of minutes.
  • Remove from oil drain on paper towel. Cut patties into strips, heat oil until smoking again, and fry until golden brown. Continue frying patties with remain mixture.
  • Serve with chutney, tzatzicki, or hommos.
