Avocado Quick Bread

- 2-2/3 c flour shopping list
- 1-1/2 tsp. baking soda shopping list
- 3/4 tsp salt shopping list
- 3/4 tsp ground cinnamon shopping list
- 3/4 tsp ground allspice shopping list
- 1/2 c butter,softened shopping list
- 1-7/8 c white sugar shopping list
- 3 eggs shopping list
- 1-1/2 c mashed ripe avocado shopping list
- 3/4 c buttermilk shopping list
- 3/4 c chopped pecans shopping list
- 1/2 c raisins shopping list
- 1 Tbs grated orange zest shopping list
How to make it
- Preheat oven to 350 degrees. Grease and flour 2 9x5" loaf pans. Sift together the flour,baking soda,baking powder,salt,cinnamon and allspice. Set aside
- In med. bowl,cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time,then mix into mashed avocado. Stir in drty ingredients alternately with the buttermilk until just mixed. Fold in the choped pecans,raisins and orange zest. Divide batter evenly between 2 loaf pans.
- Bake 1 hour or till toothpick inserted in center of loaves comes out clean. Allow loaves to cool in pan for at least 20 mins. before removing!

Just had slice of avocado bread. It is good, a unique flavor and would probably take a bit for someone to identify it as avocado. A good way to use up some avocado; I had to cut recipe to one loaf.
