Avocado Pie

- Crust: shopping list
- 5 Tbs unsalted butter shopping list
- 1-1/2 c graham cracker crumbs shopping list
- 1 Tbs sugar shopping list
- Filling: shopping list
- 2 med. hass avocados shopping list
- 1 8 0z pkg cream cheese,room temperature shopping list
- 1 14 oz. can sweetened condensed milk shopping list
- 2-1/2 Tbs fresh lime juice shopping list
- 1-1/2 Tbs fresh lemon juice shopping list
- pinch of salt shopping list
- whipped cream or confectioners sugar,for garnish shopping list
How to make it
- Make the crust: Preheat oven to 350 degrees. Brush an 8' springform pan with some of the melted butter. Mix remaining butter with graham cracker crumbs,sugar and salt in bowl. Press mixture into bottom and up sides of the pan. Bake till golden brown,about 15 mins. Cool completely on rack.
- Filling: Have and pit avocados,scoop out flesh and chop. Transfer to a bowl,add cream cheese and beart with mixer on med. speed till smooth. Add condensed milk,lime and lemon juices,add the salt and beat until fluffy,scraping the bowl as needed. Pour filling into crust,press pece of plastic directly on surface and chill at least 4 hours.
- Remove springform pan and slice pie. Garnish with whipped cream or confectioners sugar and serve immediately(top will brown as pie sits)
