How to make it

  • Cook bacon and peppers in a deep fry pan until the bacon is very crisp; set aside to cool, then crumble. Pour off all bacon fat, except enough to cover bottom of pan; set aside remaining fat and refrigerate for other uses. (NOTE: For future reference, indicate on dripping container that peppers were fried in it... which is NOT a bad thing LOL)
  • Reduce heat to medium low. Return bacon/pepper mixture to pan and add spinach leaves, one bag at a time, allowing to cook down between adding bags, until pan holds all of it. Stir occasionally.
  • Just before ready to serve, drizzle with balsamic vinegar if desired.

    OK...this is your best "creation" yet! Spinach, bacon, balsamic, and banana pepper...this sounds amazing! I LOVE spinach in any way, shape, or form (except canned...blech!) I guess this week, we'll have Windy recipes every night!!
