Easy Chicken Enchilada Skillet

- 1 tblsp. oil shopping list
- 1 lb. bonless skinless chicken breast strips, cut to bite sized pieces shopping list
- 14 oz chicken broth shopping list
- 2 tblsp.flour shopping list
- 6 flour tortillas, cut into small pieces shopping list
- 1 tsp.cumin shopping list
- 1/2 tsp. ground red pepper shopping list
- 2 tsp. garlic powder shopping list
- 1 c. cojack cheese, shredded shopping list
- salsa, taco sauce, franks, or tabasco-your choice shopping list
How to make it
- Heat oil in a large deep skillet on med-high heat.
- Add chicken, cook until its completely cooked through, stir occasionally
- In a med bowl, mix together chicken broth and flour, spices
- gradually add to the skillet, stirring constantly
- Add tortillas, combine well
- bring to a boil, reduce heat to med-low, simmer 3 min or so
- sprinkle with cheese, keep simmering until cheese is melted
- top with your choice of spicy condiment
