How to make it

  • melt butter in a saucepan
  • add chopped yellow pepper and saute until soft
  • cook baby leeks in the butter until soft and sweet.
  • In a seperate pan, cook mushrooms, garlic, herbs and chilli powder until done
  • add to leek mixture and stir in cream.
  • simmer over low heat for 20minutes
  • stir in parmesan and feta and remove just before feta starts to melt
  • serve with croutons
