Leek soup

- 1 kg baby leeks, cut into 1 cm rings shopping list
- 1 garlic clove shopping list
- 1 yellow pepper, chopped shopping list
- 25ml chilli powder shopping list
- 1 punnet button mushrooms shopping list
- 5 ml mixed herbs shopping list
- 250g butter shopping list
- 500ml creme fraiche shopping list
- 200g parmesan shopping list
- 200g feta shopping list
- croutons shopping list
- salt to taste shopping list
How to make it
- melt butter in a saucepan
- add chopped yellow pepper and saute until soft
- cook baby leeks in the butter until soft and sweet.
- In a seperate pan, cook mushrooms, garlic, herbs and chilli powder until done
- add to leek mixture and stir in cream.
- simmer over low heat for 20minutes
- stir in parmesan and feta and remove just before feta starts to melt
- serve with croutons
