Thai Chicken Stock Pot

- ● 2 chicken drumsticks shopping list
- ● 2 chicken thighs shopping list
- ● 1 large onion, chopped shopping list
- ● 1 red bell peppper, chopped shopping list
- ● 2 cloves garlic, crushed shopping list
- ● 2 Red Chillies, finely chopped shopping list
- ● 2 sticks lemon Grass, bruised shopping list
- ● 1 inch cube of ginger, finely chopped shopping list
- ● 1 cup coconut milk shopping list
- ● 1 tbsp fish sauce shopping list
- ● 650ml chicken stock shopping list
- ● water, to cover shopping list
- ● spring onions, chopped for garnish shopping list
- ● 1 packages noodles shopping list
How to make it
- Put all except sping onions and noodles in big pot
- top up with water if the stock doesn't cover ingredients
- bring to simmer ( 98℃)
- Leave for 45-50 minutes stirring occasionally
- add noodles bring to boil for 3 minutes or however long noodles take
- Serve in big bowls and sprinkle spring onions over the top
- NOTE: It is nice to remove the skin and bones from the chicken before serving if you have time
