How to make it

  • Put all except sping onions and noodles in big pot
  • top up with water if the stock doesn't cover ingredients
  • bring to simmer ( 98℃)
  • Leave for 45-50 minutes stirring occasionally
  • add noodles bring to boil for 3 minutes or however long noodles take
  • Serve in big bowls and sprinkle spring onions over the top
  • NOTE: It is nice to remove the skin and bones from the chicken before serving if you have time
