Potato Scallion Biscuits

- 3 medium russet potatoes shopping list
- 2 cups butter melted shopping list
- 2 cups all purpose flour shopping list
- 3 tablespoons baking powder shopping list
- 1/2 tablespoon baking soda shopping list
- 3/4 teaspoon salt shopping list
- 1 teaspoon freshly-ground black pepper shopping list
- 2/3 cup buttermilk shopping list
- 4 scallions sliced thinly shopping list
How to make it
- Preheat oven to 375.
- Grease a cookie sheet.
- Scrub potatoes clean and place on the prepared cookie sheet.
- Bake in the skins about 45 minutes then peel and mash with butter while still warm.
- Turn oven up to 400.
- Sift together dry ingredients and mix into the potatoes.
- Add buttermilk and scallions and combine but do not over mix.
- The dough will be quite sticky.
- Pat the dough down to 1/2 inch on a floured board and cut out with a floured biscuit cutter.
- Place 1 inch apart on the cookie sheet.
- Alternately you may drop dough by the tablespoonful onto the cookie sheet.
- Bake for 20 minutes until well browned.
