Orecchiette With Pancetta And Peas

- salt and pepper shopping list
- 1 lb orecchiette pasta(little ears) shopping list
- 3 Tbs evtra virgin olive oil shopping list
- 1/3 lb pancetta or lean thick-cut bacon,cut into 1/4" pieces shopping list
- 1 large onion,chopped shopping list
- 4 cloves garlic ,finely chopped shopping list
- 1/2 c dry white wine or chicken stock shopping list
- 2 c frozen peas shopping list
- 3 Tbs finely chopped thyme shopping list
- Grated peel of 1 lemon shopping list
- A handful of grated pecorino-roman cheese shopping list
- 2 c ricotta cheese. shopping list
How to make it
- Bring large pot of water to a boil,salt it,add the pasta and cook till al dente. Drain,reserving 1 c pasta cooking water.
- While the pasta is working,in large skillet,heat oil over med-high. Add pancetta and cook till browned,about 5 mins. Add onion and cook till softened,6 to 7 mins. Add garlic and cook till softened,2 to 3 mins.Stir in wine,then add peas and heat through for 2 mins;season with thyme,lemon peel and pepper.
- Add reserved 1 c pasta water and the drained pasta;toss to combine. Add the pecorino-romano and toss. Serve in bowls and top with the ricotta for stirring in as you eat
