How to make it

  • Put 2 tablespoons olive oil in a large skillet over medium high heat; bring to a sizzle.
  • Add sausage to skillet and cook until nicely browned and done; place sausage on a paper towel lined platter and cool until easily handled. Cut in 3-inch lengths.
  • Meanwhile, add a bit more olive oil to skillet and reduce heat to medium; add sweet peppers and onion and cook until crisp tender. Add garlic and stir; cook until fragrant (about a minute).
  • Now add potatoes and zucchini, adding seasoning as you go, salting with a light hand. Add enough chicken broth to come almost level with the surface of the sausage/veggie mixture.
  • Bring to a simmer; top with a vented lid and cook until potatoes and zucchini are done. Add sausage back in and heat through.
  • Serve with garlic toast.
