Italian Sausage & Vegetable Medley

- 2 tbsps + more if needed, olive oil shopping list
- 2 lbs italian sausage shopping list
- sweet peppers, 1 red and 1 yellow, julienned shopping list
- 1 vidalia onion, julienned shopping list
- 1 clove Garlic, minced shopping list
- 5 new potatoes, UNpeeled, cut in thin wedges shopping list
- 1 medium zucchini, cut in half or thirds, and julienned shopping list
- 1 tsp italian seasoning blend shopping list
- 1/4 tsp Crushed red pepper (cayenne) shopping list
- salt and black pepper, to taste shopping list
- 1 (46 oz) can, Chicken broth, as needed shopping list
How to make it
- Put 2 tablespoons olive oil in a large skillet over medium high heat; bring to a sizzle.
- Add sausage to skillet and cook until nicely browned and done; place sausage on a paper towel lined platter and cool until easily handled. Cut in 3-inch lengths.
- Meanwhile, add a bit more olive oil to skillet and reduce heat to medium; add sweet peppers and onion and cook until crisp tender. Add garlic and stir; cook until fragrant (about a minute).
- Now add potatoes and zucchini, adding seasoning as you go, salting with a light hand. Add enough chicken broth to come almost level with the surface of the sausage/veggie mixture.
- Bring to a simmer; top with a vented lid and cook until potatoes and zucchini are done. Add sausage back in and heat through.
- Serve with garlic toast.
