Cherry Easter Biscuits

- * 4 ounces (110g) butter shopping list
- * 3 ounces (75g) caster sugar plus 1-2 tablespoons for sprinkling shopping list
- * 1 egg, separated shopping list
- * 7 ounces (200g) flour shopping list
- * 1/2 teaspoon ground ginger shopping list
- * 1/2 teaspoon ground cinnamon shopping list
- * 3 ounces (75g) dried cherries shopping list
How to make it
- 1. Preheat oven to 200°C / 400°F / Gas 6.
- 2. Grease a baking sheet.
- 3. Cream butter and sugar together in a bowl and beat in the egg yolk.
- 4. Sift the flour, ginger and cinnamon together into the creamed mixture.
- 5. Add the dried cherries.
- 6. Knead the dough on a lightly floured surface and roll out to 1/4-inch (1/2 cm) thickness. Use a 3-inch (8cm) cutter to cut out 12 biscuits.
- 7. Place on the sheet and bake for 10 minutes.
- 8. Lightly beat the egg white.
- 9. Remove biscuits from the oven, brush with egg white.
- 10. Sprinkle with caster sugar, bake for a further 5 minutes until golden
- For those of you who don't know, caster sugar is another term for super fine sugar..
