How to make it

  • Preheat oven to 425
  • coat peppers with olive oil, salt, pepper and garlic powder
  • wrap in foil and roast for 25 minutes (can be done on the grill)
  • In medium pot add margerine
  • add lightly floured cubed chicken and cook
  • Add sherry, mushrooms, onions and garlic. Season with salt and pepper.
  • Add broth, tomatoes and seasoning. Stir
  • Add peppers and olives.
  • Cook on low heat for 30 minutes.
  • Add heavy cream add 1/2 cup grated parm cheese.
  • Add cooked pasta and toss well.
  • Top each serving with grated cheese
