- 1 lb. rigatoni, cooked shopping list
- 3-4 boneless chicken breast, cubed and lightly floured shopping list
- 1 stick margerine (not butter) shopping list
- 3-4 garlic cloves, chopped shopping list
- 4-5 cherry peppers (hot or sweet) shopping list
- 2 onions, sliced thick shopping list
- 3 green peppers, cut in 1 inch squares shopping list
- 1 28oz. tomatoe sauce shopping list
- 1/4 sherry (vermouth or white wine) shopping list
- 1 15oz. chicken broth shopping list
- 1 cup black olives, halved shopping list
- 8 oz. heavy cream shopping list
- 1 cup grated Parm. cheese shopping list
- 8 oz. fresh mushrooms shopping list
- olive oil shopping list
- salt, pepper, garlic powder, oregano, paprika, parsley and basil shopping list
How to make it
- Preheat oven to 425
- coat peppers with olive oil, salt, pepper and garlic powder
- wrap in foil and roast for 25 minutes (can be done on the grill)
- In medium pot add margerine
- add lightly floured cubed chicken and cook
- Add sherry, mushrooms, onions and garlic. Season with salt and pepper.
- Add broth, tomatoes and seasoning. Stir
- Add peppers and olives.
- Cook on low heat for 30 minutes.
- Add heavy cream add 1/2 cup grated parm cheese.
- Add cooked pasta and toss well.
- Top each serving with grated cheese
