Pea and coriander soup

- 1kg frozen peas shopping list
- 1 x onion finely chopped shopping list
- 2 x green chillies finely chopped shopping list
- vegetable boullion stock to make 500ml shopping list
- 1 x large bunch of freshly chopped coriander shopping list
- groundnut oil for frying shopping list
How to make it
- Fry onion & green chillies until soft
- Add peas
- make up stock with boiling water
- Pour stock over peas
- Set aside for 10 mins
- Bring soup to boil
- As soon as it reaches boiling point whizz in blender to retain vibrant color. Be careful with hot liquids!
- Serve immediately with fresh coriander
- If serving chilled, place blended soup in fridge overnight before serving
