Veggie Marscapone Twice Baked Potatoes

- 2 large potatoes scrubbed and salted lightly shopping list
- 2 large broccoli spears steamed and florets removed shopping list
- 2 level tbls sour cream. room temp. shopping list
- 1 pat butter shopping list
- 1 clove garlic shopping list
- 2-3 tbls marscapone at room temp. shopping list
- kosher salt and white pepper to taste shopping list
- 1 tbls grated mozzarella, room temp shopping list
- fresh chopped parsel y shopping list
- paprika shopping list
- optional finely chopped hot red pepper, cooked and seeds removed shopping list
How to make it
- Bake potatoes in oven
- Cut baked potatoes in half when cooled
- In a bowl scoop out potatoes leaving abour 1/8-1/4 inch on skin
- add sour cream, butter, marscapone, pressed garlic, and lightly mashed broccoli florets (hot pepper optional)
- Gently stir and fluff
- Fill potatoes
- Sprinke mozzarella , parsley and paprika on top
- Heat slowly in 250-300 oven uneil cheese is melted.
- Under broiler for 1 minute to brown
