Chilled Avocado Soup

- 4 avocados - peeled, pitted and diced shopping list
- 1 finely chopped shallot shopping list
- 3 1/2 c. of cold chicken broth shopping list
- 2 tbsp. of tomato paste shopping list
- 1 tsp. of hot pepper sauce (e.g. Tabasco™) shopping list
- 1 tbsp. of fresh lime juice, or to taste shopping list
- 1 tbsp. of tequila (optional) shopping list
- 2 tbsp. of chopped fresh cilantro shopping list
- salt and pepper to taste shopping list
- 2 tbsp. of sour cream shopping list
How to make it
- First you want to add avocado, shallot, broth, paste, lime, tequila to a blender and blend.
- Add some cilantro to this and blend some more.
- This can be seasoned with salt, pepper, and hot sauce.
- You will want to cover this and put in the refrigerator for at least 2 hours.
- Divied the soup into four chilled bowls, add some sour cream on top with a little cilantro and serve.
