Chilled Avocado Soup Recipe

Ingredients
  • 4 avocados - peeled, pitted and diced
  • 1 finely chopped shallot
  • 3 1/2 c. of cold chicken broth
  • 2 tbsp. of tomato paste
  • 1 tsp. of hot pepper sauce (e.g. Tabascoâ„¢)
  • 1 tbsp. of fresh lime juice, or to taste
  • 1 tbsp. of tequila (optional)
  • 2 tbsp. of chopped fresh cilantro
  • salt and pepper to taste
  • 2 tbsp. of sour cream

Directions
  1. First you want to add avocado, shallot, broth, paste, lime, tequila to a blender and blend.
  2. Add some cilantro to this and blend some more.
  3. This can be seasoned with salt, pepper, and hot sauce.
  4. You will want to cover this and put in the refrigerator for at least 2 hours.
  5. Divied the soup into four chilled bowls, add some sour cream on top with a little cilantro and serve.

There is a seasoning that I find in some of the mexican based stores around Detroit, it's called simply "Fajita Seasoning". I think this would be a great addition to the soup you've listed. It reminds me of guacamole really (if it weren't made more liquid by the chicken broth).
