How to make it

  • In a large saucepan over high heat bring water and salt to boil. Gradually in a slight stream, stir in grits (polenta) with a long-handle wooden spoon. Reduce heat, simmering gently, stirring to prevent sticking until mixture is cooked and thick, about 30 minutes. Add butter, season with salt and pepper to taste (optional).
  • Meanwhile in-between stirring grits, cook & brown your sausage. Draining well, then to sausage add bell pepper and onion, stirring to slightly cook. Remove from heat. Add sausage mixture to grits, stirring to blend well.
  • Pour or spoon into loaf pan. Cool to room temp.
  • Cover, refrigerate overnight.
  • Invert pan onto plate, releasing firmed grits.
  • Slice into thin slices.
  • Here's where you can choose your choice of morning prep.
  • #1- Heat butter or oil in large fry pan, cook slices until lightly golden each side. (careful: these will "pop" while frying!)
  • #2- Drizzle slight amount of oil on baking sheet (or spray well), place slices not touching. Cook in preheated 350 degree oven for about 12 minutes turning once.
  • Serve hot with maple syrup.
  • (For a lunch or dinner...you can add your choice of cheese to hot grits before molding. Cook either way after chilling. Serve with grated Parmesan, chiffonade basil, and Tomato Sauce.)

    For a tremendous burst of flavors without all the fat, use Turkey Italian sausage, chopped basil, and soaked then snipped sundried tomatoes (not packed in oil). Bake (as directed), then top with Parm/Sauce.
