How to make it

  • Pulse bread, melted butter and 1/2 cup cheese in a blended or food processor until bread is coarsely ground, about 6 pulses
  • Set aside
  • Cook bacon in a large, heavy bottomed pot until crisp
  • Transfer the bacon to a paper towel lined plate
  • Pour off all but 1 tablespoon of the fat from the bacon
  • Add onion and cook until softened
  • Add garlic and cayenne and cook until fragrant
  • Stir in sweet potatoes, cream, buttermilk and salt
  • Reduce heat to medium low and cook, covered until the potatoes are just tender, about 30 minutes
  • Preheat oven to 425
  • Remove pot from heat and stir in remaining cheese, cooked bacon and 4 sliced green onions
  • Transfer mixture to a 13x9 inch baking dish
  • Top evenly with the bread crumb mixture
  • Bake until crumbs are golden brown, about 15 minutes
  • Cool for 10 minutes, then sprinkle evenly with remaining green onion
