Mediterranean Pita Pizzas - Diabetic Friendly

- Ingredients: shopping list
- 1 cup drained and rinsed canned cannellini beans shopping list
- 2 tsp. lemon juice shopping list
- 2 medium cloves garlic,minced shopping list
- 2 ( 8-inch ) pita bread rounds shopping list
- 1 tsp. olive oil shopping list
- ½ cup thinly sliced radicchio or escarole lettuce ( optional ) shopping list
- ½ cup chopped seeded tomato shopping list
- ½ cup finely chopped red onion shopping list
- ¼ cup ( 1-oz ) crumbled feta cheese shopping list
- 2 Tbs. Thinly sliced pitted black olives shopping list
How to make it
- Preheat oven to 450F.
- Place beans in a small bowl; mash lightly with fork. Stir in lemon juice and garlic.
- Arrange pita bread rounds on ungreased baking sheet; brush tops with oil. Bake 6 minutes.
- Spread bean mixture evenly onto pita rounds to within ½ -inch of edges. Arrange remaining ingredients evenly on pita rounds. Bake 5 minute or until topping is thoroughly heated and crust is crisp. Cut into quarters. Serve hot.
