Ingredients

How to make it

  • Cook couscous following box directions (use chicken broth instead of water)
  • On medium heat saute: onion, pepper, and zuchinni in 2-3 tbsp olive oil and 1 tsp butter aprox. 5 minutes
  • Add garlic, saute a minute more (careful not to burn garlic)
  • Add rosemary, chipotle, soy sauce and lime juice, continue to cook on low-med heat 2-5 minutes
  • In a seperate pan heat 1 tbsp of butter and saute shrimp just til they heat up/ turn pink (shrimp cook quickly so dont over cook them)
  • Fluff the couscous and place in large bowl
  • Add the shrimp and sauted veggies to couscous and toss
  • I add the juice the shrimp and veggies were cooked in to help coat the couscous (you want it coated but not soggy with the pan juices!
  • Salt & pepper to taste
  • Adjust this recipe to your liking, I had to type this one up by memory as I rarely write down a new recipe as I cook.... :)
