Thousand Island Dressing

- 2 egg yolks shopping list
- 1 tsp Dijon mustard shopping list
- 250ml olive oil shopping list
- 1 tbl lemon juice shopping list
- 60ml tomato sauce shopping list
- 1/2 small red onion, finely chopped shopping list
- 4 tbl capers, finely chopped shopping list
- 4 tbl red capsicum, finely chopped shopping list
- salt shopping list
How to make it
- In a bowl, whisk together the egg yolks and dijon mustard till combined and smooth
- While whisking, slowly drizzle in the olive oil
- Keep whisking till the mixture thickens
- Stir in the lemon juice
- Add the rest of the ingredients and stir
- Serve with seafood or chicken

This is a lovely rendition. Somewhat more sophisticated than the ketcup and Miracle Whip that my mum swore to me was a secret recipe.
