How to make it

  • Bring the stock to a boil and add orange peel, cinnamon, cloves and salt. Simmer for 15 minutes to bring out the flavors.
  • Pour in the orange juice and bring quickly back to boiling point. Then turn the heat down and let the soup simmer, gently for 5 minutes.
  • Remove from heat and leave to cool completely. Pour through a sieve and then refrigerate if serving chilled. Scatter on parsley before serving, accompanied by orange wedges.
