Potato Pancakes

- Ingredients shopping list
- * 4 large potatoes (russets are best) shopping list
- * 1 onion shopping list
- * 1 egg, beaten shopping list
- * 1 teaspoon salt shopping list
- * 1 cup of crushed saltines (Premium Plus crackers) shopping list
- * ground black pepper to taste ( or fresh chilli peppers) shopping list
- * 2 cups vegetable oil for frying shopping list
How to make it
- 1. Finely grate potatoes with onion into a large bowl. Drain off any excess liquid.
- 2. Mix in egg, salt, and black pepper. Add enough crushed crackers to make mixture hold together. I crush them either using a blender, food processor, or by hand in a ziploc bag. The finer the crumbs the better.
- 3. Heat 1/4 inch oil in the bottom of a heavy skillet over medium high heat. Drop two or three 1/4 cup mounds into hot oil, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown.
- Serve with applesauce and plain yogurt.

Love Potato Pancakes, haven't made them in a long time. I'll have to try them your way with the saltine crackers, my recipe calls for flour. 5 forks coming your way, thanks for sharing.
