How to make it

  • Preheat oven to 400
  • Line a baking sheet with parchment paper, set aside
  • On a lightly floured surface, unfold pastry
  • Roll into a 14x11" rectangle
  • Trim down to a 12x10" rectangle
  • Place on the prepped baking sheet, brush edges of the pastry with the egg white
  • Cut 1/2" strips from the pastry trimmings, place these strips on the edges of pastry rectangle, pressing to form raised rims
  • Brush again with the egg white
  • Prick the center of the pastry with a fork to prevent puffing, set aside
  • For topping, in a small bowl stir together flour, sugars, ginger and lemon peel
  • Cut in butter until pea sized pieces form
  • Sprinkle half of the topping over the pastry
  • Arrange pear slices on the pastry, overlapping slightly
  • Sprinkle with the remaining topping
  • Bake 15-18 minutes or until pastry is golden and pear is tender
  • Serve warm, if desired garnish with whipped cream
