Cookies and Cream Cupcakes

- -2 1/4 cups all purpose flour shopping list
- -1 tablespoon baking powder shopping list
- -1/2 teaspoon salt shopping list
- -1 and 2/3 cups sugar shopping list
- -1/2 cup (1 stick) butter, softened shopping list
- -2 teaspoons vanilla extract shopping list
- -3 egg whites shopping list
- -1 cup crushed oreos (about 10) plus additional for sprinkling on top shopping list
- -1 16 ounce container vanilla frosting shopping list
How to make it
- -preheat oven to 350F. line 2 12 muffin/cupcake trays with 24 cupcake liners
- -sift dry ingredients into large bowl. stir in sugar. add milk, butter and vanilla; beat with electric mixer on low speed or use wire wisk until smooth. add egg whites, beat 2 minutes, stir in crushed oreos.
- -spoom batter into cupcake liners and bake for 20-25 minutes or until toothpick comes out clean. cool in pans on wire racks.
- -frost cupcakes and sprinkle on additional crushed oreos.
