How to make it

  • Put oven rack in lower third of oven and preheat oven to 450 then halve each potato lengthwise.
  • Cut each half lengthwise into 4 wedges then toss with oil, salt and pepper.
  • Place in shallow baking pan and arrange in 1 layer. Roast potatoes turning once for 20 minutes.
  • Sprinkle with vinegar shaking pan to distribute vinegar evenly then roast 3 minutes.
