Balsamic Roasted Potato Wedges

- 4 large yellow fleshed potatoes scrubbed well shopping list
- 2-1/2 tablespoons extra virgin olive oil shopping list
- 1 teaspoon kosher salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 2-1/2 tablespoons balsamic vinegar shopping list
How to make it
- Put oven rack in lower third of oven and preheat oven to 450 then halve each potato lengthwise.
- Cut each half lengthwise into 4 wedges then toss with oil, salt and pepper.
- Place in shallow baking pan and arrange in 1 layer. Roast potatoes turning once for 20 minutes.
- Sprinkle with vinegar shaking pan to distribute vinegar evenly then roast 3 minutes.
