Crunchy Pistachio Chicken

Chicken is dipped in a honey-garlic mixture,then coated with finely chopped pistachios,which shows off the nut's flavor. Give the chicken a little heat if you like by adding 1/2t sp cayenne pepper to pistachio mixture
Ingredients
- 2 Tbs honey shopping list
- 1 egg,beaten shopping list
- 1 tsp minced garlic shopping list
- 1/2 c roasted salted pistachios,coarsely chopped shopping list
- 1/2 c panko crumbs shopping list
- 2 Tbs chopped fresh Italian parsley shopping list
- 1/2 tsp salt,divided shopping list
- 1/8 tsp pepper shopping list
- 4 boneless,skinless chicken breast halves shopping list
How to make it
- Heat oven to 400 degrees. Line rimmed baking sheet with foil;spray with cooking spray. Combine honey,egg and garlic in shallow dish.
- Combine pistachios,panko,parsley,1/4 tsp of salt and pepper in shallow dish.
- Sprinkle chicken with remaining 1/4 tsp salt. Dip chicken in honey mixture,shake off excess. Press into pistacio mixture,turning to coat on all sides.
- Place on baking sheet;sprinkle remaining nut mixture over chicken,patting into surface
- Bake 20 mins or till chicken is no longer pink in center and coating golden brown.
