How to make it

  • 1. position rack in lowest part of oven, preheat to 400
  • 2. Caramelize onion in oil over medium heat. Cook stirring occasionally and reducing heat as necessary to prevent scorching, until softened and turning golden, about 20 minutes. Stir in vinegar.
  • 3. Meanwhile, combing herbs, spices salt & pepper in a small dish. Place turkey in large bowl and sprinkle with spice mixture. Gently kneed to combine.
  • 4. Rub mushrooms on both sides with Worcestershire. Place on turkey ball in each mushroom cap, patting down to fill. Place on a baking sheet. Bake the stuffed mushrooms on the bottom rack until they begin to soften, about 20 minutes.
  • 5. Remove from oven, spread the onion mixture over filling and top with cheese. Continue baking until cheese is melted and golden and turkey is cooked through, about 10 minutes more.

    I will give this a try. I just bought some portobellos and was trying to figure out what to do with them. This will be flexible enough that I can make turkey patties for those who won't eat the mushrooms.
