CHEESE CORN CAKE FILLING

- 8 ounces monterey jack cheese , shredded (about 2 cups) shopping list
- 4 ounces queso fresco , crumbled (about 1 cup) (see note) shopping list
- 2 tablespoons minced fresh cilantro leaves shopping list
- 2 scallions , sliced thin shopping list
- 1 tablespoon juice from 1 lime shopping list
- 1/4 teaspoon chili powder shopping list
- salt and ground black pepper shopping list
How to make it
- Mix all ingredients together and season with salt and pepper to taste. Cover with plastic wrap and refrigerate until needed. (The filling can be refrigerated for up to 2 days.)
