Breezy Caribbean Shrimp and Grape Wraps

- 2 cups hot cooked rice shopping list
- 2 tablespoons chopped white onion shopping list
- 2 tablespoons chopped Anaheim peppers shopping list
- 1 clove garlic minced shopping list
- 2 teaspoons vegetable oil shopping list
- 12 ounces peeled medium shrimp shopping list
- 1/2 teaspoon grated lime peel shopping list
- 1/2 teaspoon dried thyme leaves crushed shopping list
- 1/3 teaspoon ground black pepper shopping list
- 1/3 teaspoon ground cinnamon shopping list
- 1-1/2 cups halved seedless grapes shopping list
- 2 teaspoons fresh lime juice shopping list
- 1/3 teaspoon bottled hot pepper seasoning shopping list
- 1/2 cup mango chutney shopping list
- 1/2 teaspoon salt shopping list
- 4 flour tortillas warmed shopping list
How to make it
- Sauté onion, peppers and garlic in oil until onion is tender.
- Add shrimp, lime peel, thyme, pepper and cinnamon then sauté until shrimp is barely cooked.
- Add grapes, lime juice and hot pepper seasoning then mix well and remove from heat.
- Mix rice and chutney then season to taste with salt.
- Spread warm tortillas on a clean dry surface.
- Portion 1/4 of shrimp mixture and 1/2 cup of rice mixture on half of each tortilla.
- Fold in sides and roll into a square bundle.
