Avocado Chicken Salad

- 3 Chicken Breast- sliced in half shopping list
- 1 7oz Pkg macaroni noodles shopping list
- 8 oz Mexican sour cream shopping list
- 2 Tablespoons Miracle Whip shopping list
- 2 Tablespoon Real Mayo shopping list
- 3-4 Cups mixed vegetables shopping list
- 3 roma tomatoes diced shopping list
- 2 shallot minced shopping list
- 1 avocado shopping list
- 1/2 Cup cilantro shopping list
- 1/2 Teaspoon salt shopping list
- 3-4 Tablespoons water shopping list
- Tostados shopping list
- hot sauce shopping list
- chicken Seasoning: shopping list
- 2 Tablespoons olive oil shopping list
- 1 Teaspoon Ground chili Ancho Powder shopping list
- 1/2 Teaspoon Ground chili de Arbol Powder shopping list
- 1 Teaspoon garlic powder shopping list
- 1/2 Teaspoon cumin shopping list
- 1 Teaspoon dried cilantro shopping list
How to make it
- Mix the Chicken Seasonings together. Pre-heat broiler. Place sliced chicken breasts on greased broiling pan. Spread seasoning mixture on one side and flip and do the other side. Place under broiler flipping once, until golden brown (about 20 minutes). Remove and set aside.
- Prepare macaroni noodles as package directs. Drain them and rinse with cold water. Place noodles into bowl with mixed vegetables, diced tomatoes and diced shallot.
- Place avocado, sour cream, mayo, miracle whip, water, cilantro and salt into blender and blend until smooth. Add to bowl with vegetables and noodles.
- Dice Chicken and add to bowl with vegetables and noodles and mix everything together. Refridgerate for an hour or until cold.
- Serve with tostados and hot sauce.

Nice chicken/mac salad. Think I'll leave out the Miracle Whip. A little too sweet for my taste. Aside from that, a nice flavor balance. RJ
