Lightened Up Morning Glory Muffins

I had some left over bananas I wanted to use up, some pineapple in the freezer, and thought muffins would be a great use. My hubby declared these "some of the best" that I've ever made!
Ingredients
- 2 c. flour shopping list
- 3/4 c. sugar shopping list
- 1 tsp. baking powder shopping list
- 2 tsp. baking soda shopping list
- 2 tsp. cinnamon shopping list
- 1/2 tsp. salt shopping list
- 2 eggs shopping list
- 1/2 c. margarine, melted shopping list
- 2 tsp. vanilla shopping list
- 2 carrots, grated shopping list
- 1 apple, peeled and grated shopping list
- 1/2 c. coconut shopping list
- 1/2 c. crushed pineapple shopping list
- 2 ripe bananas, mashed shopping list
- 1/2 c. dried cranberries shopping list
How to make it
- Stir dry ingredients together.
- Whisk eggs with melted butter and vanilla
- Stir into dry ingredients
- Fold in remaining ingredients till just mixed
- Spoon into lined muffin tins. Sprinkle tops with demerra sugar, if desired
- Bake at 350 degrees 20 minutes, or until tests done
