Bean with Bacon Soup

- 1lb. of white beans (soaked overnight, drained and rinsed) shopping list
- 3 carrots, Minced shopping list
- 5 celery hearts, Minced shopping list
- 1 Onion, Minced (I used three Mexican green onions because it's all I had on hand tonight) shopping list
- 12 cloves of garlic (I just chopped up the whole thing... looooooove garlic) shopping list
- 7 or 8 pieces of bacon, crumbled shopping list
- 1 tbsp. vinegar shopping list
- juice from 1 small lemon shopping list
- 2 drops of liquid smoke shopping list
- Approximately 1 tsp thyme shopping list
- salt and pepper to Taste shopping list
How to make it
- Soak the Beans overnight
- Drain and Rinse
- In a large crock pot, put all of the ingredients into the crock pot
- Cook for 3 hours
- Take 2 cups of soup out of crock pot, puree in your blender and add back (thickens the soup)
- Cook longer, if needed, for the consistency you want... remember it's soup. :)
- Serve with homemade Sourdough bread... ;)
