Almond Milk Two

- 1 cup blanched almonds shopping list
- 2 cups water (or wine, or broth, as noted in the specific recipe in which it will be used) shopping list
- 1 tablespoon dark brown sugar shopping list
- Dash salt (optional) shopping list
- White sugar to taste (according to your recipe) shopping list
How to make it
- Grind the almonds to a flour. Or, for a thinner almond milk, grind the almonds coarsely with 1 or 2 teaspoons cold water. Place them in a large bowl.
- Put the water (or other liquid), sugar and salt, if you are using it, into an iron pot, and bring to a boil.
- Pour the boiling water over the ground almonds and let it sit for 10 to 15 minutes.
- Cool completely.
- Serve as a pottage, or soupy dish. This is excellent for invalids and infants.
- If it isn't sweet enough, add white sugar, a teaspoon at a time, until the mixture is satisfactory.
- This makes 3 cups unstrained or 1 3/4 cups strained almond milk, and serves 2 to 4 in this form as a broth. See your recipe to determine how much you require.
