How to make it

  • Grind the almonds to a flour. Or, for a thinner almond milk, grind the almonds coarsely with 1 or 2 teaspoons cold water. Place them in a large bowl.
  • Put the water (or other liquid), sugar and salt, if you are using it, into an iron pot, and bring to a boil.
  • Pour the boiling water over the ground almonds and let it sit for 10 to 15 minutes.
  • Cool completely.
  • Serve as a pottage, or soupy dish. This is excellent for invalids and infants.
  • If it isn't sweet enough, add white sugar, a teaspoon at a time, until the mixture is satisfactory.
  • This makes 3 cups unstrained or 1 3/4 cups strained almond milk, and serves 2 to 4 in this form as a broth. See your recipe to determine how much you require.
