How to make it

  • Cream together the 1/2 cup butter,sugar& rind until light & creamy
  • Beat in eggs , one a@ a time
  • In a separate bowl combine flours, salt, & baking soda
  • Stir into creamed mixture. Add apricots
  • Spread mixture into a lightly buttered 9x9" pan. Combine
  • the 1/4 cup br. sugar & coconut in a bowl.
  • Cut the 2 TBSP. butter into the mixture until crumbly.
  • Sprinkle over batter
  • Bake @ 350 for thirty min. until lightly browned & firm
  • cool.
  • Cut into 16 bars
  • Good served with: Iced tea swizzled with
  • a long stick of fresh pineapple.
