Red Onion Red Potatoe Salad

- 9 medium size red potoes washed shopping list
- 1 large red onion AKA: Red salad onion or a purple onion shopping list
- 1 tbs butter shopping list
- 1 cup tbs sour cream shopping list
- 1 tps salt shopping list
- 1.2 tps pepper shopping list
- 1 handfull chopped fresh spinish shopping list
- 1/2 cup light or fate free mayo - NOT MERICAL WHIP shopping list
- 6 slices of baccon friend nad crumbled (you can leave out) shopping list
- 5 tps corn (you can leave out) shopping list
- 1 tbs lemon juice shopping list
- 2 tps dill shopping list
- 2 tps paperkia shopping list
How to make it
- Wash your Red Potaoes and put them in a pot and boil
- LEAVE THE SKIN ON
- about 12 min in a rapid boil and take out
- using a fork and a knife chope the potoes they still hot so they are a bit messy and not perfect little chunks
- also its fine if there not cooked all the way and some parts are mushy... that they it should be
- While the potoes are still hot add your butter and mayo and sour cream and stir it all up mixing it together so everything is melted yummy'ness :)
- Peel your red onion
- slice the onion down the middel
- **IF YOUR EYES ARE BURNING USE A STONG SENTED CANDEL TO HELP RELEAVE YOUR TEARING UP**
- With the onions now slice in half take eache half and make very VERY thin slice, almost see through (it ok if you dont get them that thin ... but try !!)
- it doesnt matter if you go across or up and down
- add the onion and remaning ingerdents
- toss all together and set in the fridge good for 4 days !
